We had a Jedi party for my son one year! The party favours were bags with glow sticks (lightsabres) and we made felt toys. You can see yoda peeking out in one of the bags below. I didn't get a photo, but they were super simple and easy. Googly eyes, felt, hot glue....we made jawas, yodas, chewbacas, etc...
One game was: fly the ship (paper airplane) into the death star to blow it up! As you can see some of the airplanes flew right in. The boys really liked this game! We painted the death star on a cardboard box, and cut a hole. Easy!
A jedi party cannot be complete without a death star pinata. The jedi each took turns whacking it with a lightsabre, of course! The problem was...it wouldn't break! We made it out of paper mache, but aparently we made too many layers of newspaper, cause it wouldn't break. We ended up ripping a hole in it and shaking out the candy! Ha!

For Jedi training, we learned how to construct our own lightsabres. They were rolled up newspaper. Each jedi (guest) made their own.
We had some teenagers come dressed up as jedi to train the young padawons.
Darth Vader himself showed up and battled each jedi! That was definately the highlight of the party!
And of course, the birthday boy was the one who got to defeat him!
